After having completed an Masters in Philosophy and Literature, I lectured for two years at the United Arab Emirates University. I then completed a Masters of Science at the Oxford School of Geography and the Environment, focusing on how to measure the environmental impacts of food preparation. I am currently finishing my Doctor in Philosophy in Geography at Oxford working on the global heritage foods and the impact of Slow Food on food producers. My reseach led me to found in 2014 Azure, a company dedicated to the support of indigenous corn farmers in Mexico, and providing gluten-free baked goods to the USA. Throughout my studies, I pursued an amateur career in boxing, having won championships in both Britain and Mexico. I was awarded a Sport's grant by Oxford University to train in Cuba. In 2014, I became Belgian champions of amateur boxing. I still box.
